NAPA TOFU SOUP (Winter Longevity Guide)
Ingredients:
4 cups vegetable broth
4 slices fresh ginger
4 scallions, sliced
1 tbsp coconut aminos
8 napa cabbage leaves, sliced 5 oz shiitake mushrooms 1⁄2 block soft tofu, diced 1⁄4 tsp white pepper
1 tsp sesame oil
Instructions:
Simmer broth with ginger and scallions for 5 minutes. Add napa, mushrooms, and tofu. Season with coconut aminos, white pepper, and sesame oil. Serve hot.
